Just another update to one of my older recipes.
Butter's not getting any cheaper, so I looked up a recipe that uses Oil instead, and yeah you totally can!
So I'm slowly on my way to making this recipe Vegan. Just gotta get rid of the eggs (note - bananas do not work in this instance) and find some vegan chocolate.
85g Cocoa Powder
180ml Oil, Rapeseed or Vegetable Oil are good choices (or 200g Melted Butter)
100g Soft Brown Sugar
300g Caster Sugar
4 Eggs, beaten
1tsp Vanilla Extract (or other)
100g Plain Flour, sifted
1tsp Baking Powder
200g Chocolate Chips (or chopped chocolate)
Pinch of Salt
1. Preheat your oven to 150*C and line a 20cm x 30cm baking tin with parchment.
2. Sift the Cocoa into a large mixing bowl along with both Sugars, and whisk together.
3. Add the Oil (or melted butter) and mix fully. Then add the Eggs, one at a time, along with the Vanilla Essence.
4. Sift in the Flour, Baking Powder and a heavy pinch of Salt. Fold it in gently and try not to overbeat the mixture. Then add the Chocolate Chips.
5. Once everything is mixed and consistent, pour it into your prepared tin and bake for 50-60 minutes.
6. Once the Brownies are done, remove from the oven and let them sit in the tin for another 20-30 minutes before removing, cutting and serving.
