A young lady like PaoTir's and Bagheera'S daughter Baligha of course loves sweets – and thankfully, the rich fields – and the cuisine of Mahenandra have a lot to offer in that regard. Still, sweets like Laddu are usually reserved for festive occasions. Maybe the charming daughter of Sawai Bagheera and Lady PaoTir can convince one of the palaces servants to prepare some for her outside these seasons.
Ingredients
180 g Chickpea Flour (Besan)
200 g Ghee (or liquid butter)
180 g powedered sugar
40 g fine grained semolina
30 g unbleached, ground almonds
1 tsp Cardamon powder
1 tsp Pistachios (for garnishing)
Melt the Ghee or butter in a large, non-stick pan, mix the chickpea flour with the semolina.
Stir everything together very well until the mixture achieves a uniform golden-yellow color. Then Roast the mixture over medium heat for about 10 minutes, stirring constantly. After 4 to 5 minutes, the color will turn a lighter brown.At this point, the chickpea flour will develop a characteristic and intense aroma, which signals the readiness of the Besan.
Remove from heat and set aside to cool for about 12 minutes.
Pour the still-warm mixture into a bowl and mix in the cane sugar.
Now, add the cardamom powder and ground almonds. The mixture should now release its typical, intense fragrance.
Mix everything very well; it is recommended to continue by hand after a while to knead it into a workable dough.
To check the consistency, take a walnut-sized amount and press it in your hand. If the mass holds together, use warm hands to form the rest of the mixture into small, firm Laddu/Ladoo.
Garnish the Laddu/Ladoo with the slivered pistachios or cashew by pressing them carefully into the still warm balls. Alternatively roll them through sesame briefly.
