You can feed them little wooden shields, or a colorful tunic as a special treat.
And "They only grow to match their enclosure size" is untrue and cruel, they enjoy large maze-like enclosures later, so having a nearby minotaur labyrinth or adventurer dungeon they can roam and play in is a very nice bit of enrichment.
