Something to satify a hunger for surf or turf and delightfully displayed from the kitchens of
jeevestheroo
It's recipe time with Jeeves. I believe originally this recipe was from a book, but I've been making it for so long that I've long since stopped referring to an actual paper recipe for quantities, etc. However, I'll try to standardise for those of you who might try to make this dish for the first time. Description below! :3
Jeeves' Surf and Turf Spaghetti - To serve 2 people.
This is a great dish for people who love pasta, but are bored with dishes that involve tomato based or white sauces! It's not a dish for those who like their foods bland, with olives, anchovies and onions, but for those who truly love the tastes of the Mediterranean, you're in luck! I thoroughly recommend this dish to any lovers of Italian food or more traditional surf and turf dishes. <3
Ingredients:
Spaghetti, preferably wholemeal, to a quantity suitable for your diners. 3-4oz per person will give you a plateful about the size in this image.
6 anchovy fillets.
3 rashers of bacon
2 medium onions
6 olives, stuffed or unstuffed
2 cloves of garlic
8oz mushrooms
Ground Black Pepper to taste
1 tbsp Chopped Parsley, or 1.5 tbsp dried parsley
4 tbsp Olive oil
Parmisan Cheese
Method:
1. Put your pan of water for the spaghetti on to boil while you chop up your onions and mushrooms, and slice or cut your rashers of bacon into smaller strips.
2. Heat a frying pan with your olive oil, and once heated add your onions and bacon with a sprinkling of ground black pepper. Fry at a gentle sizzling temperature (or medium heat if you don't know your cooker well enough to judge that), then add your mushrooms. Fry these ingredients together for a further eight minutes after adding the mushrooms, stirring every so often to ensure the bacon is cooked through.
3. While frying your bacon, mushrooms and onions, Put your spaghetti into the pan full of boiling water and leave to boil for ten minutes.
4. Chop/crush your garlic cloves up finely, slice your olives, slice your anchovy fillets into thirds, chop your parsley if fresh/not pre-chopped.
5. After your frying pan of mushrooms, onions and bacon has been on for its eight minutes, add the garlic, parsley, olives and anchovies. Mix in well and allow to heat through, probably another 2 minutes. Add salt to taste if necessary, though I personally feel the anchovies and bacon give you all the saltiness you need.
6. Drain your cooked spaghetti and divide up onto plates, or into a serving bowl. If serving in a bowl, add your frying pan's contents now and mix through. If you're serving individually on plates, use common sense when dividing the frying pan's contents between diners. ^^
7. Grate some parmisan cheese over each plate to taste; about 2 tbsp worth per person should be enough, but if you like parmisan, feel free to add more. :3
8. Serve and enjoy. <3
