One of my Japanese style dishes with an Indian flair!
Ingredients:
3 boneless “fast fry” pork cutlets*
1 cup flour
2 beaten eggs for egg wash
1 cup panko breadcrumbs
3/4 cup frying oil**
1 cup rice + 1 cup water and 1 tbsp soy sauce
1 packet favourite curry sauce***
Recipe:
1-preheat your oil in a large pan
2-cook your rice for 7 minutes (cook too long and it gets clumpy!)
3-flour+egg+crumb your pork cutlets then fry until each side is golden brown
4-slice your cutlets and serve with your rice and curry sauce
5-enjoy!
~ From Chris: A few things to mention here:
* You can use thin cut, boneless pork chops here
** A neutral oil is your friend, so go with safflower or a 'blended' oil specific to frying
*** I would recommend "S+B Golden Curry" cubes, and they range from mild to spicy, so go with what you like!
Further, if you have an air fryer, you don't need to fry these at all - just work in batches, 3-4 minutes to cook at most.
