A quick homebrew of hard cider for ScruffyCon 2011. The bronze pendant on the bottle has Pan on one side and Dionysus on the reverse, so I am thinking this will be a religious endeavor as well. Simple kitchen witchcraft.

Odd? I find it to be rather straightforward. Make a base liquid with whatever ingredients you choose, for whatever flavor. Add yeast and a fermentation lock. Then let nature take it's course of controlled rot. Then enjoy the deliciousness that ensues.

As long as it's a short term fermentation. :) I would never have a long term fermentation in a plastic container. However, I do agree. Cider is straight forward :) Hope it terms out amazing!

This is only a 2 week quick brew. For longer term I use glass.

After a 2 week fermentation do you carb it? The yeast probably isn't settled or finished fermenting by then? I guess it depends on what yeast your using. How does it end up tasting? I am curious

I cap it, put it in the fridge for a day. Rack it and filter out as much yeast as possible, then fridge it again for about another 3 days. The remaining yeast is still enough to give a bit of bubble to the brew.
