The proper way to get introduced to and enjoy the authentic local cuisine in Southeast Asia is through the various street hawker stalls. Hainanese Chicken Rice is a beloved classic, and the national dish of Singapore.
This was what I had for lunch on the second day I was in Singapore. Best strategy with the street vendors is to try a little bit of something from different ones because most all of them specialize in one or two specific dishes. I would love to go back to Southeast Asia for the friends and for the food.
