
Recipe - Ryuuki's Special no.8 ~ Smothered Frog Legs

Started cooking around 10pm and after eating and cleaning up the kitchen I figured I'd post this. Sorry for the awful photo quality! My cellphone just doesn't like the lighting in my kitchen. :C

Ryuuki's Special no.8
Smothered Frog Legs with Steamed Rice
Ingredients:
Frog Legs
2 cups of all purpose flour
2 tsb of McCormick's Perfect Pinch cajun seasoning
3 1/2 tsb of garlic powder, granulated
3 1/2 of black pepper
3 1/2 of Lawry's seasoning salt
1 tsb of Mrs. Dash Original Blend
Olive oil or Canola oil
1 cup of white rice
Utensils and supplies needed:
Fork
Frying pan
Plate
Paper towels
Rice cooker or small pot to cook rice
1 gallon freezer bag
Preperation and Cooking:
Take your frog legs and rinse them under cool water and then place them into a bowl of cold water, not too much, but just enough to cover them. While they're sitting, take your freezer bag and put in your flour and spices. You may want to add more spices depending on how much flavor you want, the listed measurements are just a ballpark guess of how much I used initially. I kept adding more in until I was satisfied with the taste. Close your freezer bag and shake it vigorously to mix the spices and flour. After you've done this, heat your frying pan and oil over medium to medium high heat.
With your flour and spices mixed take your first set of frog legs and put them into the bag. Close the bag and shake them until they are completely coated in seasoned flour. Place the legs into the hot oil (mind your fingers) and repeat this for a second set. I cook only two sets at a time to prevent overcooking and burning. Let the side down brown for five minutes before turning them carefully with a fork. Repeat this until the flour coating is a cripsy golden brown and the meat is white. Do the same for the remainder of your frog legs. Once they are done cooking, place them on your folded paper towels on a plate to get out the excess cooking oil.
While your last few legs are cooking start up your boiling water or rice cooker for the rice. The rice shouldn't need too much of your attention so you can finish up your frog legs and get ready to make the gravy!
Once all of your frog legs are done cooking turn down the heat of your frying pan to low and SLOWLY begin to mix in a little bit of flour until it thickens. Add in small amounts of water to loosen the gravy and add in more seasonings to taste. Depending on how thick you want the gravy you can put in more flour or more water. Plate up your rice and frog legs and add a good slathering of gravy to the whole deal, then enjoy!

Just a forewarning! Sometimes the fresh legs are still attached to the frog... the live frog. So if you ask for them, be prepared! I know CMA (our asian store) has live frogs and fish and I was like, "OH GOD FROGGY! ; A ;" I didn't buy my legs from there but I bought a shit ton of candy and sweets because I'm a cow~
That's just the gravy on the rice and the legs themselves that make it look like that. Coupled with my horrible quality photo~ XD
Its hard to find them in your regular grocery store, unless they specialize in selling exotic meats or wild game. I actually picked these up in Kroger (no idea if Kroger is out in CA) and its a normal grocery store so I was surprised to find them there. :D

Lol, Kroger is now Frogger forever. We've got Safeway back home! ajfsklfjslk that just made me so happy to hear because back in Indiana I think there's like..... one in the city. Ilu Safeway~ ; u ;
This is also true! Ugh, factory farms are just awful in general when you really think about it. Its probably the same reason people are grossed out by fish, since they swim in their own junk. Pretty much anything can seem pretty gross really~ I think jello is the nastiest thing to have ever existed, no lie. It squicks me out sooooooo hard. x A x

I think Dana was trying to answer your question about taste *points down* but the reply just got left as a comment. My opinion on the taste is, to me personally it has a reptilian chicken taste. Like it tastes like chicken but you can tell its not because of the undertone flavor that follows. Its actually quite good though despite how strange it looks! XD

Depending where the come from either farm raised have a cleaner taste to them. Where as caught in wild have a gamey taste to them. Another factor that affects taste is the water quality frogs caught in ponds tend to have a slight grassy undertone, where as frogs caught along running water have don't have the slight grassy taste. To me they don't taste like chicken, all tho they can be made to taste like chicken fairly easily.

But yes! I've had some that have a sort of grassy taste, and some that don't. A good way to get the grassy taste out is soaking them in water for a while before flouring and frying. :D
I've yet to taste the wild caught legs, but since there's no foresty place here in the big city, I'll just have to do with store bought lol~

I've eaten a lot of "weird" stuff in my day. I'm actually pretty fond of crickets! They taste like peanuts oddly enough. My mom bought me up with the philosophy of try any food once and if you don't like it, you don't ever have to have it again~ XD

The ones I've eaten have been the small, brown kind. Kinda like the ones at the pet store. I've never eaten a big cricket like the huge black ones that are outside. XD Some how I don't think they'd taste the same since they're wild~
Its so funny because what we here in America think is so gross, its a delicacy in another country! XD Lots of other people eat bugs since its a readily available source of protein and there are sooooooooooo many, its hard to run out lol~
