Mira has retained a preference for those foods from her time as a student as well. Broad beans are a common ingredient in the northern regions of the empire. It is said that potatoes have been brought to Thylis by a maritime expedition a few centuries ago. Where the original habitat of this plant lies is lost to history though.
Ingredients:
3 jars of Broad Beans
300 g Potatoes
2 medium Onions
diced 6 slices of Streaky Bacon
2 tbsp Butter
Flour as needed
Dried Summer Savory Salt and pepper
Peel the potatoes and place them in a pot of salted water. Bring to a boil and cook for about 30 minutes until tender.
Drain the broad beans through a sieve but make sure to reserve the bean liquid in a bowl. Heat the butter in a large pan. Cut the streaky bacon into small pieces and fry in the butter briefly until it starts to crisp. Add the diced onions to the pan and sauté until they are translucent and fragrant.
Sprinkle a little flour over the bacon and onions to create a roux. Gradually pour in the reserved bean liquid, stirring constantly to create a smooth, thickened sauce.
Add the broad beans to the pan. Season with summer savory and pepper. Let the mixture simmer over low heat for about 15 minutes.
Serve the creamy beans and bacon alongside the boiled potatoes.
