What's on a Yoshi's back is argued whether it's a shell or saddle. We never get any confirmation or de-confirmation from Nintendo. Since it's drawn here without it, I wasn't sure if this was intentional and you think of it as a saddle than a shell, or an oversight and forgot to include, or I guess option 3 is since it's transformation, it didn't get grow in yet.
