IMO you should start with fallout 3 (with all the dlcs), then fallout NV.
Haven't played any of the originals unfortunately but they're not in the same style as 3 and onwards- fallout 4 is alright, it's the one I've played the least tbh. 76 is MUCH better then it used to be, and looks the best out of all fallouts, but I would highly recommend if you begin playing that to not focus so much on the story and just more so on leveling up and having fun as I've seen for newer players that the higher level enemies tend to frustrate them and make them not want to play as much. It does kind of suck that unless you are completely OP in 76 it's going to be abit of a grind/impossible to kill certain enemies solo.
