Sesame Glazed Chicken with Summer Greens and Sauteed Squash
What you'll need
Grill (alternatively, you can sautee the chicken if grilling isn't an option)
Sautee Pan
Sauce Pan
Reamer (for juicing the orange)
Cutting Board
Stainless Steel Bowl (for Salad tossing)
Yields 4
1/2 pound fresh spinach, endive, and raddichio
4 each Chicken Breast, cleaned and trimmed.
1 Small Squash, sliced
1 Orange
3/4cup Rice Wine Vinegar
1/4cup Sugar
1/2tsp Grated Ginger (you can use ginger power too, just a pinch will do)
1/2tsp Sesame Oil
3/4cup Soy Sauce
1/2tbsp Brown Sugar
--- Sesame Seeds, Toasted for garnish
We'll Start with the Sesame Glaze for the chicken, begin by mixing the Sugar, Rice wine vinegar, and ginger to the
saucepan. Cook over a medium heat until it reaches a syrup-like consistancy. Remove from the heat and add the
Sesame oil, soy sauce, and brown sugar and simmer till incorporated and to the consistancy of your liking. Remove
from the heat and let it sit unti you're ready to grill the chicken.
With the prepared chicken, brush them with the glaze and grill them for about 8-12 minutes, turning once. Remove from the grill and
slice the chicken at an angle into strips.
In the sautee pan, add the orange juice and the squash pieces and cook over a medium heat until the squash is nice and soft. Remove from
the heat and set aside.
Mix up the salad in the stainless steel bowl and portion out into serving plates, add the chicken and squash and serve. Garnish with sesame seeds
Extras:
I did not include a dressing, since everyone has varying dressing likes and dislikes. Use whatever you like the best.
Although i said to just assemble everything on top of each other like in the picture, you can toss all the ingredients together too.
And now the Educational Part:
Sesame Seeds, We see them everywhere, but most of us don't realize how much of it we consume. Last year alone, the United States imported more than
102 million pounds of sesame seed, the majority of which went right to those buns you get with your burgers at most fast food places. Although breads,
rolls and bagels are among the most familiar foods associated with sesame, its uses extend far beyond the realm of baking. Sesame seeds have a very
deep flavor profile. The seed has a nutty, sweet aroma with a milk-like, buttery taste. When toasted, its flavor intensifies, yielding an almost
almond- or peanut butter-like flavor. Sesame seeds are also rich in calcium, vitamins B and E, iron, and zinc, sesame is high in protein and contains no cholesterol.
