Sensational summer sushi and rolling rice balls are on the menu from the kitchens of

*warning* i am NOT in any way, shape, or form a sushi chef. I actually had a hard time at first but learned to correct my mistakes. i actually made more than what was shown here but these where the prettiest ^^
Sushi:
Yaki nori (the seaweed that holds it together, you can generally find it packaged at your grocery store)
Sushi rice (which is a short sticky rice but i used long jasmine rice for mine)
Fillings:
you can pretty much you anything
i used canned mini shrimp (already deviened) and canned salmon
*another warning, if u used the same canned salmon you will find it isnt much more than hunks of the fish thrown into the can, you will need to skin and remove alot of the bones yourself* i didnt trust the salmon raw to i lightly sauteed it with a little lime juice, salt and peper for taste.
along with the sea food i also used cream cheese, green onion, and avocado.
How to roll Sushi:
many people find it easier to uses a bambo rolling mat to do this and while i do have one,i found it eaiser to roll it by hand at the start and finish with the mat.
1. place the sheet of Yaki nori shiny side up long ways on your mat ( we wll be puting the rice on the inside of the nori for stability but you can make rolls with the rice on the outside too, for beginger i found that way harder though)
2. spread an even layer of rice over 1/4 of the sheet closest to you, leaving some nori showing.
3. place the fillings u choose in the center of the rice, dont put too much or ur shushi wont roll properly
4. Roll the sushi by first folding over the edge of the nori you left exposed over the filling and then roll, setting it seem side down .
5. cut into bite size pieces, i put mine in the fridge for an hour to let everything mesh and stay together.
*tip* Keep everything damp! this rice with stick to everything around it so its best to keep your hands and instraments damp so the rice wont stick.
Onigiri:
this is the equiviant of a japanese sandwhich and its really quiet yummy.
they are simple to make too
make a ball of rice , press a dimple into it with your thumb and fill the hole with some filling ( i just used the filling and rice left over from the sushi), add more rice then press and shape, finally adding a strip of nori at the bottom.
I felt like plain whit rice was boring to just mix water and a litte food coloring, mix it in with the rice and there u go, the rice is much cuter now.
i sort have cheated with the Onigiri and have an onigiri mold but any cookie cutter that is sturdy works too.\\
