This was another dish inspired by TV/experimentation...
Very easy to make this though.. prosciutto wrapped pork tenderloin on leeks with honey dijon sauce.
The pork:
Just a plain pork tenderloin from the local store, sliced into about 3/4 inch slices. Picked up some prosciutto de parma and wrapped it around the sliced tenderloin. (Now I have to say that in this particular photo its more of a belt since I had hardly any left, normally you can wrap up the whole thing) I use cheapo toothpicks to hold the prosciutto in place for cooking. In my saute pan I added some oil and over medium heat I seared them for about 3-4 minutes on each side and this ended up leaving them cooked thoroughly all the way through.
The leeks:
Just standard leeks, sliced about 1/3 inch thick and threw them in an oiled saute pan at med heat, salted them (about a pinch or two) added a couple splashes of white wine vinegar until they were fairly soft.
The sauce:
In a bowl I added a whole one of those 12 ounce honey bears, and 1-2 heaping tablespoons of dijon mustard (depending on taste, you can always add more) then 1 teaspoons of soy sauce and 2 teaspoons of olive oil. Then a pinch of salt and a pinch of pepper and whisked together. Then just drizzle over the meal and you get a savory sweet acidic blend of goodness!
Oh, and dont ask about the cilantro leaf, it was just for fun, haha (I am weird like that)
