This! I feel like you can immerse yourself in your worldbuilding much more when there's sub-project stories in it. I myself have a few complete with writing, music and some playables. Having these really helps working on stuff and figuring stuff out.
I'd also suggest using Obsidian for that sorta stuff! It's a very useful little tool.
