Everything you see here was made with beer, including the cheese dip. I was going to make a fish burger, but the fish I bought was big. Also, this is deep-fried; please be careful because it involves hot oil. I used haddock. This tasted exactly like something you'd get at a restaurant.
Beer Batter
1 1/3 cup of beer (any beer will do)
1 cup of flour
1 large egg
Salt
Pepper
Garlic and onion powder
Paprika
Something I did before prepping the batter was to lay a paper towel on a baking sheet, place the fish on it, and sprinkle some salt on top to help draw out moisture from the fish. This helps make it crispier. Leave it in the fridge for 20-30 minutes, then get ready to make your batter. Grab yourself a large bowl and begin mixing all your ingredients at once until they're well combined.
While you're waiting for your fish, you can start prepping your fries. Take a French fry cutter (or a knife will work here), slice your potatoes. Place the fries in a bowl, rinse them, and set them in a bowl filled with water for about 30 minutes.
Heat up your oil (I used vegetable oil) to 375F no hotter. Gently place your pieces of fish in the hot oil (be careful, of course), then cook for 4 to 5 minutes. For your fries, you can use the same oil, but let them cook a little longer for crispier fries.
For the garnish, I used two lemon slices and chopped parsley.

3/4 cups of cheddar cheese
2 tbsp of butter
3 tbsp of flour
3/4 cups of beer and milk
Garlic powder, onion powder, salt, abd pepper.
Create a roux by melting your butter and mixing in your flour. Slowly pour the milk in, and then your beer. Finally, add in your cheese, salt, pepper, garlic, and onion powder.
