Fresh homemade crispy coated chicken pieces sure to be juicy and succulant just ready for the dipping from the kitchens of

Here is another installment from my kitchen. There are some crispy chicken nuggets i made today for dinner. They are 20000% real chicken since they are actual chicken breasts... so here we are with the recipe:
2 Boneless Skinless chicken breasts
1 C. Instant Potato flakes
1 C. White Flour
2 whole large eggs
1-2 Tbs. lemon juice (optional)
Cooking oil of choice ( I used vegetable for this cause it's what i had )
Seasonings (season to taste as you like)
Cut the chicken into 1inch pieces and place into a bowl. In a separate bole mix flour and potato flakes and seasonings set aside. In a third bowl crack both eggs and beat with lemon juice and any liquid seasoning you may wish ( soy sauce for example). Heat oil in large pan or pot (i have a deep-fryer so i used that) roll chicken in the breading first then dip in the egg mixture then return to the breading place directly into hot oil about 325 degrees (medium to medium high) repeat with more chicken pieces until pan is full or you are out of chicken. Fry until golden brown then turn over (if deep frying pull basket out of oil and let sit momentarily to allow excess oil to drip free then dump onto paper towel or wire rack over parchment paper.) once completely brown on both sides place on paper towel and serve.
Serving Suggestions:
may be served with any steamed or boiled vegetables. French Fries, Mashed potatoes, or even baked potatoes make a nice side as well.
Notes: I made this with my deep-fryer in mind i don't know how well it will come out in a frying pan so i strongly suggest that you use a large pot with around 2 inches of hot oil to cook these. If pan fried be sure to take precautions against spattering oil as it may cause fires when it hit the heating element or open gas flame.
