Lovley lucious lemony chicken from the kitchens of

Chicken
1 pound boneless chicken breasts
1 egg white lightly beaten
2 teaspoons flour
1/2 teaspoon salt
1/4 teaspoon grates ginger
1/4 cup oil
Lemon sauce
2 Teaspoons cornstarch
1 1/2 table spoons sugar
2 tables spoons lemon juice
2 teaspoons soy sauce
3/4 cups chicken stock
1 teaspoon sake
1. Cut the chicken breads into strips. Combine with egg white, ginger, flour and salt. Add chicken strips, mixing well. then marinate refrigerated for 30 minutes
2. heat oil in fry pan swirling to coat. Drain chicken from marinade and stir fry over medium high heat until just cooked through but not browned. Set chicken on a plate to keep warm and discard excess oil.
3. mix cornstarch with 2 tablespoons cold water. add to fry pan with sugar, chicken stock, lemon juice, sake, and soy sauce. stir over high heat and boil for 1 minute. Then add chicken stirring to coat.
I usual serve with rice or egg noodles
