HERE is where it gets interesting...
You need- four ramekins
Butter the ramekins thoroughly, then you need-
~ BACON (any kind will do, I used my fave, maple flavored)
- Slice the bacon in half, and then layer crosswise at the bottom
~ 2 English muffins, split apart so that each one goes into the ramekin (I had four, if you have more ramekins then put more English in, duh :P)
- Just cut the crusts off with a pair of CLEAN scissors or kitchen shears, you can give the cut off parts to the birds or something :P
~ cheese (optional, but any shredded kind will do- for something like this, Id go with the taco mix kind)
~ the pico de gallo
~ 4 eggs that you crack right on the top
Just do this all in layers folks, just the way it says here, and you're good!
Place those ramekins on a cookie sheet (I'd recommend covering the sheet with parchment paper, in case it gets messy)
Turn the oven on for 350 degrees F, let cook for about 25 - 30 minutes (I went with more, and got more "over hard")
Take these out of the oven when done, then dust with either salt, pepper or a bit of paprika (Some folks pour on a teaspoon of heavy cream...I'd recommend just putting more cheese on top, to be honest)
Enjoy and serve on a lazy Sunday :)

Egg ON Pico de Gallo you mean? And your Pico de Gallo looks like there's rice in it. Now I want to make bibimbap (Korean rice dish) with a Latin American flare for dinner except it's rice AND Pico de Gallo and since you mentioned bacon, I'll use samgyeopsal (Korean style thick bacon). I think I can make this here in Korea. The cheese, the most common one in Korea is imsil cheese and that can be shredded so I might use that.
