"Saturated" means with more color. When you see a color picker, the far left (the grays) is 0% saturation and the far right (where the colors are) is 100% saturation. You want to balance the saturation out sometimes and other times you want very little saturation. An "unsaturated color" would be colors in the 05-30% range of saturation.
