This is a little something I came up with for a friend's birthday. It's fun and tasty, and was a hit at the potluck. It has a slightly grainy texture, like micro-tapioca. LOL
1 container Boston Cream Pie flavored yogurt
2 cups whipped cream
1/2 cup whole milk
6 tlbsp cocoa powder
6 tlbsp sun crystals (or 12 tlbsp sugar)
1 pkg regular grahm crackers
2 tlbsp butter or margarine
4 packets unflavored gelatine
1tsp silver-coated sugar crystals
2 tsp vanilla
Crust
Crumble graham crackers into a fine powder, and mix with 3tbsp of the cocoa, and 2 tbsp of the sun crystals. Stir well, then stir in melted butter/margarine until well coated/grainy. Press into the bottom of a pie pan to form crust.
Blend remaining cocoa, yogurt, 1tsp vanilla, and 2pkts gelatine with 2tbsp sun crystals until mostly smooth.
Blend milk, whipped cream, 1tsp vanilla, and 2pkts gelatine with 2tbsp sun crystals until mostly smooth.
Spoon alternating globs of the two pudding-like mixtures into the pie crust, and swirl with a fork until lightly blended, then form into decorative peaks.
Sprinkle with a touch of cocoa powder, and the silver sprinkles for a bit of visual fun, and enjoy!
(I liked it, and the birthday boy said it tasted a bit like underdone cake! LOL)
