Anyway, if you want some sort of delay on getting them back to normal for plot purposes, there are plenty of ways to do that.
How about this? Princess Celestia says she can restore the ponies' horns and wings to their proper owners, but she hasn't used the necessary spells in centuries, and will need a day to brush up. Invited to spend the night in a palace suite, the ponies have a slumber party and try to figure out how to use their new parts. Much laughter and mishaps ensue.
