
To make the dough for the potato Oyaki
2 cups plain mashed potatoes (no milk, butter, etc.) that have been cooked in salted water
4 Tbs. potato starch or cornstarch
I recommend making homemade mashed potatoes rather than trying to cut corners and get them from a restaurant like KFC. It will work mind you but won't look as nice (for me they wouldn't form the dough that you need.
you make the potato dough by mixing the potato starch or cornstarch in the hot mashed potatoes until smooth. set aside.
for the filling you can add whatever you want for a savory or sweet filling. for these I used a left over crab stuffing that my mom had made the night before. if you would like to make it from scratch...
1/4 cup butter
2 tbsp drained capers.
8 oz. fresh lump crab meat, drained
1 tbsp mayonnaise
1 tbsp fresh lemon juice
melt butter in a skillet over medium high heat. Add capers: cook until they begin to sizzle. Add crab meat. Stir in mayonnaise and lemon juice. Season with salt and pepper to taste.
Pull out a small ball of dough, Round and flatten each piece on your palm. Put 1 heaping teaspoonful of Crab meat mixture in the middle. Gather the dough over the filling, then make a flat little cake. (The dough is very easy to manipulate so this doesn’t take much time). In the meantime, coat a large frying pan with non-stick cooking spray and heat it up.
Once pan is heated, (sprinkle a little water on it, if it sizzles you're golden.) then put in the formed oyaki. Cook until browned underneath, then turn. Brush the cooked side with a little soy sauce using a brush or drizzle on a bit with a spoon. Turn once more and brush the other side with soy sauce.
Remove from pan and let cool.
