Having fun with pita bread tonight. I love taking an Italian formula (pizza) and giving it a Greek spin.

Recipe:

Preheat oven to 350f

1 pita shell
1 tbsp butter
2 cloves garlic
1/2 cup chopped onion
2 tbsp pesto sauce
mozzarella cheese
Parmesan cheese
feta cheese
green olives

Prepare a cake or pizza pan by coating the bottom with a little bit of olive oil. Place pita in pan. Heat butter in a frying and add roughly chopped garlic and onions. Saute until translucent. Spread on top of pita bread and add pesto sauce. Top with cheeses and olives. Bake at 350 for 15-20 minutes, then turn the broiler on for another minute or two to finish. Slice, eat and enjoy!
