hehe thanks and i will for sure keep going as im a color artist but i dun think ill be drawing anytime soon so i have one ti blame but myself since i am limiting myself

Nah, Carve up one for autumn in general. It's good practice, and a unique touch that you won't see often.
Besides, it's fun. X3 I used some cheap pottery tools that I had left over from highschool.

Have very sharp pottery tools and a nice big trashbag to catch all the tiny scraps and pumpkin mush. Otherwise it will be a messy process. Other than that I'm a noob at this sort of thing myself, so I can't give many tips. Lol

It would have to be a very sharp metal spoon. Regular metal spoons wouldn't cut through the skin of the pumpkin very well. Even a knife would have trouble doing what simple pottery tools could do.

I really don't know any other way to do it other than to use pottery/carving tools. You could try it with different sized knives and razors, but idk. I've never tried it that way. Go for it, i'd like to see the results.
