Tonight I tried another Paleo recipe from paleodietlifestyle.com, but I'm going to warn you, if you don't like mushrooms, don't even bother reading any further. The good news is though, this can be modified to be vegan friendly.
Ingredients:
• 1 lb of mixed mushrooms, chopped with tough portion of stems removed (I used cremini, shiitake, and white button mushrooms)
• 1/4 cup of butter or ghee (I used butter, vegans, I imagine coconut oil is good with this)
• 2 onions, chopped (I used sweet onions)
• 4 cloves garlic, minced (I used that jarred garlic because we have a giant jar of it in the fridge, 2.5 teaspoons worth)
• Handful of fresh thyme, leaves picked
• 3/8 of a cup or so of red wine (original calls for 1/4 but...wiiiiiine. Also you can substitute beef stock!)
• 3/4 cup of heavy cream or full-fat coconut milk (original calls for 1/2 cup, I used cream rather than coconut milk)
• 2 green onions, chopped (white parts too!)
• Sea salt and freshly ground black pepper to taste (I used 1 tablespoon of kosher salt, because I like it. I was liberal with the pepper because my family consists of pepper fiends)
Directions:
• Before chopping the mushrooms, rinse them to remove any excess dirt and then pat dry.
• Heat a large skillet over a medium heat. Add the butter butter or ghee.
• Stir-in the onions and garlic. Cook until they begin to brown, about 7 minutes.
• Add the mushrooms and season to taste with sea salt and freshly ground black pepper. After cooking for a few minutes you will notice that they let off moisture. You want to continue cooking until this moisture evaporates entirely.
• Add the wine or stock as well as the heavy cream or coconut milk and stir well to ensure that the flavors are dispersed evenly.
• Once the stew has simmered for a few minutes, add in the thyme leaves, green onions and adjust the salt and pepper seasoning. Allow to sit on a low heat for a few more minutes so that it thickens.
Because we're bad, bad paleos, we had a piece (but just one!) of fresh baked garlic bread (as in, bread with garlic cloves baked INTO it) from the store and, oh no, whatever was to become of that opened bottle of wine? It was amazing :)

About the only time I will ever have bread is if it is fresh from the oven, with REAL butter, at a restaurant.
Hey, do you have Jimmy Johns where you live? They make a great "unwich" with iceberg lettuce instead of bread. I get the #12, Beach club: turkey breast, provolone, sprouts, cucumber, tomato, and guacamole (hold the mayo) oh it is sooo refreshing and yummy.
And ditto on the pasta twice a week thing. It's cheap, so we would do that a lot, but we've been doing hot pot a lot which is mostly meat and veggies and that's become our stupid cheap meal because it consists of whatever leftover meat and veg is in the fridge :D
Although for a moment, looking at the icon image and before seeing the description, I thought that you were showing off your espresso (foam artistry) skills and was a little horrified. It's not supposed to be... Chunky.
I was worried it would look like an artfully arranged cup of barf, honestly.
This recipe says to add the wine at the same time you add the cream, I let it simmer on low for a bit so there's likely to be some alcoholic content in it still, but just barely.
In a beef stew which when I do it it calls for both wine and Guinness beer, it has a lot longer to stew and simmer and just adds to the flavor. This dish was a really quick dish to make, I think it took less than an hour total including prep time. (I'm being generous here).
I cook with wine, being Italian, but how strong is the taste? Do you think it would be good with beef stock, or both wine AND beef stock?
A good book to read that is not about paleo lifestyle but what happens in your body on a low carb diet and can be applied to the paleo lifestyle is "Why We Get Fat: And What To Do About It" By Gary Taubes. I read it and it put things into perspective for me in scientific terms I could understand.
Also to put it into perspective, for 6 months I was calorie counting (I was starving and sad all the time) and exercising regularly (via personal trainer) both aerobics and anaerobic exercises, I actually got BIGGER (bulked under my fat) and my clothes didn't fit (worse than they did). Doing this? Quicker results, my clothes fit better. I still exercise to be heart healthy. So yeah, it works for me. :)
It's just so hard for me to accept after a lifetime of hearing the opposite health advice. x_x Plus we are too poor for meat nine times out of ten, waughhhhh.
What is the paleo stance on beans? That's our main source of protein and fiber.

..I'd try that paleo diet but i'm vegetarian, so i'dlikely starve to death, haha.. Looked about on the site and I actually agree with the dieting for the most part, like it makes sense.. although I feel we as a species aren't healthy because of the things we choose to eat, but the way the markets have switched cost around on us. We have become disconnected with foraging/hunting for our own food for the most part, and so healthy things, nutritious and natural stuff, is all expensive, and processed and calorie-laden things are incredibly cheap. Society hotwires our brains to save money on food, so we don't really think about eating healthier, even though we'll spend four bucks on a coffee drink but we wont dish out a quarter more for a natural product that we have to prepare ourselves. -shrug- Anyways. xD
How long have you been on this thing? I read the comments and you said you have more energy and stuff? That's awesome, i'm happy that this diet works for you. :)
As for the cost thing, yeah the book I read, "Why We Get Fat: And What To Do About It" by Gary Taubes explains that often times the fattest people are the poorest, because of the types of calories they're eating. It talks about how these women in Africa with starving babies are fat, but clearly they're not sacrificing their babies lives so they can eat decadently and get fat, they're fat /because/ they're starving and can only manage rice and bread at best when they do get food, just some are affected differently by the nutrients (or lack thereof) in their food. Some are skinny, some are huge. Both are starving.
I've actually been leaning away from breads and other things recently and just went vegan for a month, and I noticed that with the lack of bread and dairy in my diet i've lost weight, even though i ate a ton of food in vegetable form. I know it's hardly the same concept because i'm lacking some vital nutrients, but I did notice how much better and more energized i felt when I ate more natural.
Just curious, as it seems like a paleo food; are they cool with honey consumption? I wouldn't go around eating nothing but honey, but it seems like it would make a nice additive to things as a flavour enhancer or occasional pick-me-up. :)
Yes! I've noticed this too. I suppose it ranges from metabolism to metabolism but it is true anywhere you go. people can be overweight but still going hungry, because their bodies aren't getting the basic nutrition they need and are craving; they are just filling their bodies with an overload of calories that the body has no time to burn, and so becomes fat. Not really the people's fault unless they simply choose not to eat healthier when they have access to it on an affordable basis. Then again, you could open up a whole other can of worms by saying "If everyone ate healthy and the way they were supposed to with access to all nutrients in their natural form, the medical companies would go out of business, because obesity and disease would be drastically lower and there would be no need for supplements and/or medicines that help to cure said diseases." It's the Big money's fault just as much as our lack of knowledge as a people. :C In both cases the masses are normally very blindsighted.
And yeah, basically there's a lot of hidden "bad" things in what we eat nowadays, and what's readily available is not often the best for you. You have to go into your meal planning with a lot more thinking, but its worth it in the end.

I had around a pound of white button mushrooms and one cup of brown mushrooms (because I'm a wimp)
I used whole cream (18%) mixed with 2% milk instead of half and half. Home made half and half.
Beef stock instead of wine because I'm not a drinker, and I had some stock already from a roast I made a few days ago. (ice cubes made from stock for a soup is just an awesome idea. But I digress)
It was surprisingly good!
I always wanted to make a mushroom soup. But i end up just sauteeing the mushrooms and eating them with a little salt and butter.
Actually putting them to good use was fun.
I'll have to make this again.
And I'm sure like most soups, this will taste just as good tomorrow, so I can have the rest for lunch.
