Watercolor is tricky, and though I can do a lot with it as is, I sometimes "cheat" by overspraying the work in progress with clear acrylic to hold down the preceeding layer so I can work more color onto the piece.
Also, as I'm somewhat color-blind, I keep my pallet simple, using color theory basics to do what I can't see. It avoids weird or unintended mixes. It also helps with the "clean" look, less mixing and less chance of mud.

I use an airbrush, to control how much of what kind of coverage I get. Acrylic airbrush transparent extender (I got a 16oz bottle of Golden brand, lasting forever) has worked best for me. Both as a layer coat and top protective coat. For a particularly durable top coat, Pledge with Future shine, basically a clear acrylic, can also be used.
However, in either case, the acrylic might give a slightly wet look to the vividness of the color which you may or may not like.
