The best way to escape a Kappa's clingy hands and at the same time make it your "servant" is to bow to them. It may sound strange but they are obsessed with etiquette and courtesy. So when they bow in return the water in their head pours out, making them weak and unable to do much. It is then you can make a deal with them. You can tell them that if you carry them out in the water again then they must promise to never hurt you. They never break their promises.
Kappas are some really astounding creatures. And their desire for cucumbers are just cute. You managed to capture the essence of a real Kappa just perfectly.
I wonder if Nintento found some inspiration to their Koopas from the Kappas. They have their similarities. :D

Legend says if you bow to a Kappa to show respect, the Kappa will oblige and spill his strength giving spring water by accident.
I also heard that they were somewhat vampiric...and cucumbers with the names of children carved into them were like appeasing offerings so the Kappa wouldn't eat any of the villager kids. Fascinating creatures, Kappas.
