Some colourful tasty veg for a simple side dish in this fast hurried world that we live in from the kitchens of

If I'm on a busy schedule and I want a balanced meal which should include a lot of veg I grabe the frozen stuff.
I keep as many frozen vegetable mixes in my freezer as I can afford because believe it or not test have proved that much of the frozen produce that is commercially available have the nutrients and flavours flash frozen in there and often better than buying it and preping it from the fresh food section.
I love home grown the best but this takes time, I do prep and freeze my home produced veg too.
One fatal flaw in frozen veg is that it is very very plain so here is a way to jazz it up a bit.
Honey Citrus Vegetables
2 cups mixed frozen veg (peas, carrots and corn pictured)
Juice of 1 Orange (I used a tangello for this one)
1 teaspoon honey
salt and pepper to taste (about 1/2 teaspoon mixed)
Place frozen mixed veg into a microwave safe bowl (you'll need a lid or cover)
Add the orange juice, honey, salt and pepper
Cover
Microwave on high (in 900 watt microwave) for 3 minutes
Stir well and serve with or without some of the juice.
Personally I prefer to drain it.
It makes a great side of veg that's quick, tasty and colourful.
Note: (1) You can use any citrus you like for this to get different flavours eg: try the juice of two lemons
(2)You may have to adjust the time if using a higher or lower wattage microwave.
(3) They can be cooked on the stove top, just put all the ingredients into a small pot and heat through.
