I had a lot of people asking me about twice baked potatoes. So I thought I would upload a picture.
Basically, you bake some potatoes until they are soft (like you would for mashed potatoes). Cut them in half, then scoop out the insides, leaving a little bit of the potato attached to the skin. Mash up the scooped out potatoes and mix them like you would for mashed potatoes. Add a little milk (I prefer using sour cream instead), and butter. But then, you add more to it, like cheese, bacon, onions if you want. I also like to add a little garlic powder.
Put the concoction back into the potato halves and bake them again. You can sprinkle a little more cheese on top (for looks) if you like. Personally, I like to bake it so that it has a nice, lightly brown color on top. Less so if you put cheese on top.
Serve up and enjoy!
