a great rich chocolate cheesecake
Chocolate Crumb crust
mix together
1 1/2 cup graham cracker crust
1/2 cup powdered sugar
w1/3 cup powdered cocoa
1/3 cup melted butter
press firmly into the bottom of 9 inch spring form pan
Cheesecake
2 cups semisweet chocolate chips
3 8oz packages softened cream cheese
1 14oz can sweetened condensed milk (not evaporated)
4 eggs
2 tsp vanilla
heat oven to 300 degrees
place chocolate in metal bowl and set in oven to melt stirring occasionally
Beat the cream cheese in large bowl until fluffy
Gradually beat in condensed milk until smooth
Add melted chocolate, eggs, and vanilla mix well
Pour into prepared crust
Bake for 1 hour 5 minutes or until center is set, the top will still have some jiggle to it
Remove from oven to a wire rack
With a knife loosen cake from the sides of the pan
Cool completely and remove pan sides
Refrigerate overnight
While I didn't use a ganache this time I have in the past. So I'll include the ganache recipe as well

4 tbsp corn syrup
stir over low heat until chocolate is melted
remove from heat and mix in 2 tsp whipping cream or milk
Pour over cooled cheesecake carefully spreading over the top
you can use the same recipe with white chocolate, and some food coloring to make it more colorful. The ganache can also be spread from piping bag
