A lot of things really.
Skyrim has more graphical and gameplay stopping glitches on the Xbox than Oblivion did. That is the main thing. You can't even read the text on a SDTV, so I have had to listen to voices the whole time.
The gameplay is a lot better and fairly balanced...at the beginning in Skyrim. Once you become level 30ish, you have too many overly cheap perks that make the game totally unfair. I play on master, and get executed upon one hit most of the time, which is very challenging, but adds fun into the game.
I mind the graphics, although that is just my opinion. They aren't as glowy and fantasy like as Oblivion had.
