Celebrate the 80's with this smooth and silky dream of a pie from the kitchens of
archadia
When I was a kid everything was flavored with Kool-aid or cheese powder. That's because I was born in the 80's. Well, my mom used to make this gelatin pie with Kool-aid that I thought was so AWESOME back when I was a kid but now I bet I'd hate it. My favorite back then was orange flavor.
When I make it now, for some reason, I always end up with these cool layers like what you see here. This isn't anything much: I only use a package of instant flavored gelatin (like red raspberry and strawberry, sugar-free) and low-fat FROZEN whipped cream (2 cups per package). I make the gelatin according to package directions, but only use the one cup of boiling water and whisk it into the powdered gelatin, then whisk in the frozen cream really quickly. The bottom layer I pour in the graham cracker crust. If you want the bottom layer to have layers, too, you'll have to freeze the graham cracker crust before pouring in the warm gelatin mixture.
Let the first layer set. Probably overnight. Make the second layer the same way as the first and pour it /gently/ over the first layer. If your first layer is cold enough, you'll get a nice, clear separated layer like I did in the middle. It's so tasty and eighties. Not quite as eighties as Kool-aid, though.
