I had a pie crust that needed to be used so I made my mom a potpie, it comes second to meatloaf as her favorite food lol.
since iv never made pot pie before, i combined a few recipes and then did a whole lot of winging it, which is normal for me. xD I normally would have used fresh vegetables but my mom is impatient when she is tempted with good foods, and as id been talking about making this for a week but neglected to do so until now.. i didnt want to wait for vegetables to cook. :l
Ingredients:
1lb chicken breast (cubed)
1can carrots drained
1can peas drained
1/4 cup celery chopped
1can potato slices
1/3cup butter
1/3cup onion chopped
1tbs garlic minced
1/3cup flour
salt and pepper (to taste)
1/4tsp celery seed
2cans chicken broth
2/3cup milk
2 pie crusts
1 egg
Instructions:
preheat oven at 450F
in a sauce pan, combine chicken, carrots, peas, celery, and one can of broth and let boil for about 15 minutes, remove from heat and drain, and add potatoes. (since i used canned potatoes i didnt cook them with the chicken just because i thought they would get smashed while stirring)
in another sauce pan melt butter, then add onions and garlic, cook until onions are clear. Then stir in flour, salt, pepper, celery seed, the other can of chicken broth, and milk, let simmer until it becomes creamy, then remove from heat.
line the bottom of your pie dish with one pie crust and add the vegetable mix, then poor the creamy mix ontop.
Cover with the remaining pie crust, seal edges and cut away extra crust and make slits in the top.
brush egg whites onto the top of the crust, this will make it golden instead of brown (please dont forget this xD it looks so much nicer)
bake for 30-35 minutes
[i actually combined the cream and vegetables before i added them to the crust, so when i added all of that to the crust i had about a serving of extra filling which was pretty good to just snack on while waiting for the pie to cook, or in my case, i had an extra crust and i made a small pie in a bowl for my mom to bring to lunch the next day]
