He was a sweet family dog, but pretty uptight with other dogs and also snobby with food - like a real British gentleman! ...or gentledog?

stfu! You do NOT have one, too!
You're just getting more and more ridiculous, flir.
How old is it? My was still a great, friendly family dog...liked attention, didn't mind strangers, but was super cautious around other dogs and stayed the hell away from water (aren't they hunting dogs?!)
What kind of eccentricities does yours have?

Ridiculous, me? Surely you jest!
My family got her when I was in the sixth grade, so I suppose that makes her something like eight and a half years old now. Doesn't like water either, and she's grown increasingly spoiled as time's worn on; frankly I'm not even sure if she's particularly fond of me anymore! Oh, and she's a bench-type Springer, so no hunting for her.
As far as quirks go, the ones that stick out most in my mind even after having largely been away from home for the past couple of years are her extreme loquaciousness (seriously, if you do something she doesn't like, she simply will not shut up about it) and the way she always delicately folds her front paws whenever she lays down.
All in all a very regal sort of dog. But now I'm getting nostalgic.

I didn't realize there was 2 types...
I mean, they crop the tails so they don't rustle foliage while hunting and wouldn't they have to retrieve fowl in the water? That's why I thought it was funny ours didn't like to get wet ;)
Mine didn't bark much, unless someone came to the door or he was chasing squirrels.
But he DID fold his paws as well! It's true about them being regal. Despite holding himself quite dignified, he was always playful and affectionate.
Post some pics of yours, k?
