Continuing this year's challenge, the kitchens of Full Moon Cuisine decided to take on bar cookies. This subject? A Southern staple: lemon bars. However, as always, this recipe could stand to have the volume turned up a bit. With a little bit of time, you can have a sweet and tart treat ready to wow your diners.
Here's what you'll need:
The cookie crust:
- 2 sticks of butter (at room temp)
- 1/2 cup sugar
- 1 tsp vanilla
- Pinch of salt
Filling:
- 6 extra large eggs (at room temp)
- 3 cups sugar
- Zest from 5 lemons
- 1 cup freshly squeezed lemon juice
- 1 cup flour (all purpose)
To begin, preheat your oven to 350 degrees F. Next, cream the butter and sugar together for the crust using a hand mixer. Once combined, add in the vanilla and salt, then pour the dough into a 9x13x2 glass cooking dish. Bake for approximately 15-20 minutes, then set on a wire rack to cool. Make sure you leave the oven on!
While your cookie crust is cooling, time to make the filling. In a large bowl, combine the eggs, sugar, flour, lemon zest, lemon juice and whisk together to thoroughly combine. Once your crust has cooled, poor the lemony mixture over the top and return the dish to the oven for another 30-35 minutes (depending on your oven). When finished, allow to cool to room temperature, cut, and serve. Note, these are even better after they have had time to set up in the fridge overnight.
The gentle sweetness of the cookie helps to compliment the tartness of the lemon filling. Making these in the cold winter months helps to remind us that spring will soon be here.
