Seeing as red velvet cake gets its name from the red dye, this cake requires a whopping two tablespoons of red food color. That's a lot! Here's a glimpse of the batter before being prepared in the pan. Notice the Kitchen Aid - that thing works baking miracles! :P

Like someone already said, use the beat extract if your not already using it. Lots of food coloring can make for some funky after tastes. You could also try the powdered food coloring. Expensive, but it professional grade, highly concentrated and it doesn't have the weird after taste. You also use a FRACTION of regular dye and its not as controversial.
