Here's something I like to call an Acronym Love Note. I take every letter of a person's name and write a few sentences with it. Once one letter has gotten a good paragraph, I work on the next letter. Repeat until the last letter, and then sign it at the bottom.

I wanted to do this for a while, but only tonight did I have the motivation and inspiration for it. Who is this note for? Well just put the first letters of the paragraphs together!
