Colourful and flavoursome a vegetable blend that is sure to please from the kitchens of

Meat is expensive.
Potatoes on the other hand are cheap!
And tasty.
A staple in our house is sweet potato fajitas.
Because we can't afford a lot of meat and we ALWAYS have tortillas.
Stuff you Need
Tortillas (corn or flour)
1 large onion
2 bell peppers (whatever colors you like! I like green & red)
2 sweet potatoes (or one giant one)
1 tbs cumin
salt or garlic salt to taste (any salt)
black pepper to taste
2-3 tbs olive oil to coat
**Optional Toppings
wide cooking pan (with lid)
PREP
-Peel the potatoes and cut them in thin slices. If you'd like quarter slices for smaller bites.
-Seed and cut the bell peppers into chunky slices
-Peel and chop the onion into thick chunky slices.
COOK
putt your potato slices in the pan and add the olive oil. Mix it up a bit so you get a mostly even coating.
Turn the heat to medium-hi. You want it hot but not so hot it starts to smoke.
Cook the potatoes on their own, you want them to get some Caramelization going.
You want to give the potatoes a head start on cooking, so let them cook about 10 minuets on their own.
**When you add your onions and bell peppers is sort of up to you, the longer you wait the more raw they'll be. The earlier, the sweeter they'll be.
I add mine 10 minuets after the potatoes, but for sweet veggies add them early. For more bite, add them late!
It should take the potatoes about 20 minuets in total to be soft enough to easily break apart with a spoon or spatula. At this point turn off the heat and cover.
While the pan is covered heat up your tortillas and get your toppings!
Top with lettuce, cabbage, tomato, cilantro, black beans, corn, queso fresco, creama mexicana, sour cream, avocado, mango, or your favorite hot sauce! Maybe a little lime :O
After you're down heating tortillas, everything should be ready to go.
I serve it with beans and rice!
Note: If you omit dairy toppings this easily becomes vegan and is a nice alternative to tofu for Mexican food. :)
