This bouncing beautiful tart will be one to remember from the kitchen of

I got round to making some more of my special tarts today. Lacking any small tart shells I had to use one for pies. And it worked quite well! And because I'm feeling extra generous, I'll give you guys the recipe. :D
You can make you're own tart crusts, but I use store baught ones. They're just as good, and saves a great deal of time. If you use store baught shells remember to let them thaw out about 15 minutes before you start mixing.
This recipe makes about 24 tarts. I've modified it to make 36, if you want to make 36 instead of 24 just increase the amounts by half. Although feel free to do what I did in this picture and just use a pie crust instead of tart shells.
You will need:
2 eggs.
2/3 cup castor sugar.
4 tblspns cocoa.
1 cup of ground almonds.
6 tblspns of cream.
1/2 cup of apricot jam (Although this isn't exact as you'll just use a small dob of jam in each shell. Also, feel free to use any other kind of jam you like, or none at all)
24 blanched (Skinless) almonds.
*Preheat oven to 160' C (Or 320' F)
*Place tart shells (Or pie crust) on a tray to thaw out.
*Beat eggs and castor sugar until thick and pale.
*Sift in cocoa.
*With a flat bladed knife stir in ground almonds and cream until mixed through.
*Gently place a small dob of jam in each tart shell. (If you're useing a pie crust and put a thin layer of jam at the base of the crust. Not a lot, just a thin layer)
*Gently spoon the filling mix into the tarts.
*Place a single blanched almond on the top. (Get creative if you use a pie crust)
*Bake for 15 minutes until puffed and set.
*Leave to cool.
*Dust with icing sugar or powdered sugar is desired.
And there you go. My special Chocolate Almond Tarts. Enjoy ^^
