Another delightful dessert from the the class kitchen of
seigi and friends. A very delightful recipes to share.
My culinary teacher had split our class into two groups for a "restaurant style" lunch and this was the dessert that was served to the half of the class I was on (this was by far one of the two best deserts I've ever had) note the vanilla ice cream wasn't made from scratch. ice cream machine we had didn't work well the last time we tried to make ice cream >>
Brownie-
Ingredients:
1/3 cup, 1 Tablespoon, and 1 teaspoon melted butter.
1 1/4 cup white sugar
1 1/4 teaspoon vanilla extract
1 3/4 eggs
1/2 cup and 2 Tablespoons all purpose flour
1/3 cup, 1 Tablespoon and 1 teaspoon unsweetened cocoa powder
1/2 teaspoon salt
1/3, 1 Tablespooon and 1 teaspoon semisweet chocolate chips.
Directions-
preheat oven to 350 degrees, lightly grease 9x13 baking dish. Combine melted butter, sugar and vanilla in a large bowl then beat eggs one at a time; mixing well after each until thoroughly blended.
Sift together flour, cocoa powder and salt. Gradually stir flour mixture into chocolate mixture until blended. stir in chocolate morsels, spread batter evenly into baking dish.
bake in preheated oven for 35-40 minutes or until an inserted toothpick comes out clean.
Caramel sauce-
ingredients:
1 cup sugar
6 Tablespoons butter
1/2 cup heavy whipping cream
Directions:
first things first, make sure you have everything near you because if you don't work fast the sugar WILL burn. it is also best to wear oven mitts because caramelized sugar is hotter than boiling water @.@
Heat sugar on moderately high heat in a heavy bottomed (works best in thick bottomed pan) 3 quart saucepan. as the sugar starts to melt stir vigorously with a whisk, as soon as it comes to a boil stop stirring. you can swirl the pan at this point on if you wish.
as soon as all the sugar melts (should be a dark amber color), immediately add butter to the pan and whisk until the butter has melted. Once butter melted take pan off heat, count to three then slowly add cream and continue to whisk to incorporate it. (note when you add butter and cream the sugar WILL foam up a LOT)
Walnut Sauce-
Ingredients:
2 cups maple syrup
1/2 cup honey
4 Tablespoons blackstrap molasses
1/2 cup packed light brown sugar
3 Tablespoons dark rum
2 teaspoon grated orange zest
4 cups toasted walnuts (350 degrees for 5-10 minutes)
Directions:
In a large sauce pan (recommended it should be double the volume of ingredients) combine all ingredients for sauce except walnuts and bring to a boil. Boil gently until mixture thick then stir in walnuts.
