Here is an astoundingly delicious delightful cake from the kitchens of
fuzzypaws
Well this is possibly the highest-calorie thing I've ever made! It is also impossibly delicious. <3
How do you do this? Well, start with a nice rich chocolate cake, baked up in two cake rounds. You can either make one from scratch, or make one from a cake mix, or dress up a cake mix with better ingredients. However you do it, I recommend melting a whole bag of mini chocolate chips or 12 ounces of fine chocolate shavings into it to make it richer and moister and more chocolatey - you need the tiny pieces so that it does actually melt into the cake batter.
Next, make the filling! With an automatic mixer, go ahead and mix all of the following until fluffy:
8 ounces (1 brick) cream cheese, softened
1 cup creamy peanut butter
2 tbs butter, softened
1 tsp vanilla extract
2 cups powdered sugar
So is your cake out of the oven and cooled now? Take one of the cakes and level it by cutting off the rounded / dimply top, so it will make a good base. Spread the entire cream filling over that cake, then put the other one on top of it. Alternately, you could chop each cake in half and make it four layers of cake with three layers of filling, but that's not how I did it here. :3
Lastly, the ganache! Ganache is easy. Just heat 1 cup of heavy whipping cream and 10 to 12 ounces of dark chocolate in a small saucepan over low heat, stirring constantly until melted and shiny. Spoon the chocolate all over the cake and spread smooth, then put in the fridge to set.
Enjoy! In small slices. XD
By the way, there is a trick to the ganache. Spread some ganache in a cake-sized circle on a large sheet of wax paper, then assemble the cake on top of it. Apply your ganache. You will inevitably have extra ganache mounding around the bottom of the cake. Later when it is all set, you can use a sharp knife to cleave off the extra ganache at the bottom, and pull the wax paper off the bottom.
