Probably by their horn, or by biting somepony's neck.
I mean, probably this ones are young changelings, and the queen is a mature one (You know, like the Headcrabs and Gonarch in Half-Life, for example). So when they are young, probably they have to bit their victims.
But, when older, they can consume love mentally, like draining it by being near their victims, like Queen Chrysalis.
