
I took the plundge and tried my hand at making salted caramel sauce from scratch. No damages to my kitchen supplies or myself and it's delicious! Now to think of devious ways to use it. muahahahaha
Basic Caramel recipe:
1.5 cups sugar
1/3 cup water
1/2 tsp vanilla
1.25 cups heavy cream
I tweaked the recipe above to include:
1 tbsp corn syrup (if you want crystaling insurance)
Artisan salt - 1/4 tsp or more depending on the crystal size
1 tbsp butter (or more if you wish)
Boil sugar and water in a saucepan on med heat till it it starts to become amber in color (at least 10 mins)
Watch very closely till it hits a dark amber. Quickly and Carefully with your face away from the pot, pour in cream. stir like crazy to combine for it's gonna bubble like mad
Add vanilla and salt when you take it off the heat. cool too room temp to thicken.
