This is a sensational soup for any season from the kitchens of
kajitorataotsu
I found the recipe a few weeks ago, and it just stuck out to me as something completely different from anything I've made/had before. As is, this was also the first recipe that I streamed live as I made it today! I have to say, it was a lot of fun, and thank you for all who came to watch it even for a minute or so! There will definitely be more Food Streams in the future, you can count on it :3 And so, to the recipe~!
Cauliflower & Goat Cheese Soup
Ingredients
-1 medium sized cauliflower, cut into small florets
-1 tbsp olive oil
-1 sprig fresh rosemary, finely chopped
-5 to 6 cups water or vegetable stock (I used water as I didn't have any stock at hand)
-Pinch of sea salt (I used about..a tablespoon of it, if not a little more)
-Ground black pepper (used also about a tablespoon, its to taste)
-1 tsp garlic powder
-1/2 cup rolled oats
-1 1/2 cups goat cheese
Directions
1. Heat the olive oil in a large sauce pan/pot and add the chopped rosemary and cauliflower florets. Let them saute for a few minutes in the oil. (the cauliflower will probably be a bit crumbly, be careful of making a mess!)
2. Add in the water/stock and bring to a boil. (This will probably be the most impatient part, lol)
3. Add the oats and season the soup with the salt and pepper. Leave to simmer until the cauliflower is fully tender. (You'll know when it is because the stems and caps will become somewhat translucent in color)
4. Turn off the heat and add the goat cheese.
5. Very carefully, put the soup into a blender and puree. (If you have a hand blender, use this, but still be careful. You are dealing with a VERY HOT substance and if splashed on you, it can cause damage)
6. Serve warm.
Garnish with ground black pepper, paprika, rosemary, or you could even do shaved/shredded parmesan-reggiano.
Like I said above, this recipe was nothing like I've ever had before. Very different, but in a good way as it was very tasty! I added a few dashes of chipotle tobasco into my bowl as I like spicy foods, and it was pretty good too.
This was pretty easy to make, a simple yet unique dish that one should probably try just for the heck of it, you might surprise yourself!
