Vegan chicken is made of soy usually. Sometimes mushrooms or wheat gluten.
The word chicken is used to describe the taste and texture.
Kind of like "cherry popsicle" for a popsicle that tastes like cherry although it has no cherries in it, or "peanut butter" to describe the the butter-like consistency of the peanut spread.
I eat vegan chicken, beef, shrimp, fish, etc all the time. Pretty much everything has a vegan version. Almost every grocery store nowadays has these products in the vegetarian section.
