Mother's Day Chocolate Covered Strawberry Spice Cake
Happy Mother's Day!! The cake was suppose to say "Happy Mom Day" but I ran out of room so it just says "Happy Momy" :V
WHAT YOU'LL NEED
-1 box of preferred spice cake mix and all essential ingredients
-1 can of cream cheese frosting
-1 can of white frosting
-1 bag of semi sweet chocolate chunks
-1 container of fresh ripe strawberries
-1/4 cup milk
--A double boiler (If you don't have a double boiler, it's really easy to make one. All you need is a boiling pan and a metal bowl slightly bigger then the pan)
-2 9x9 baking pans
-1 wisk
-1 large mixing bowl
-baking sheet with wax paper or aluminum foil
STEP1:
-Follow your cake's instructions on the batter process in the mixing bowl making sure to whisk it really good. When the batter is ready, pour into greased cake pans. Place in oven and let bake. When finished let cool completely (I'd say place it in the fridge for 5 minutes or so)
STEP 2:
-While the cake is baking, wash the strawberries and cut out the pits. Also try to dry the strawberries off the best you can with a towel or paper towel. Next fill half of the pan with water and heat to a rapid boil. After boiling, set to medium heat and place the metal bowl on top. Fill the bowl with the bag of chocolate chunks and 1/4 cup milk. Keep stirring until the chocolate has completely melted and the milk has thickened with the chocolate to become rich and creamy.
STEP 3:
Dip the strawberries in the chocolate. (If your bowl isn't deep enough to submerge most of the strawberry, then dip in sideways and twirl until chocolate covers the strawberries completely. I'd recommend using latex gloves so you don't burn your fingers) Place the chocolate covered strawberries on a wax paper or aluminum foil covered baking sheet and let dry for a bit.
STEP 4:
Take the 2 cake halves and frost with the cream cheese frosting. Then take the chocolate covered strawberries and place them all around the cake and then on top. For the top row, press down a little bit into the cake so they don't slide off. Next, take the white frosting and fill in the gaps. Then finish decorating however you feel like. I ended up using the excess chocolate to pipe the rest of the design.
NOTE: Keep in mind that this cake should be kept refrigerated or eaten immediately as the strawberries will rot after a few days if left out, and the water inside them will make the cake soggy.

ya know it's not the prettiest ... but if you had that next to a pretty cake , that's the one I'd wanna eat first because it looks like it tastes good VS the pretty cake just looking good & thats the one thing I love about when you make cake , That it's not perfect but it never fails in taste
