kawakoi we have a beautiful bread full of fruit.
Made this last night, came out pretty good
Basic Banana Bread:
* 1/2 c. Butter, Softened
* 1 1/4 c. Granulated Sugar
* 2 Eggs
* 4 tbsp. Sour Cream
* 1 1/2 c. AP Flour
* 1 tsp. Baking Soda
* 1 tsp. Vanilla Extract
* 1.5 cups Ripe Bananas, Mashed
Variation
* 1 Bar Dark Chocolate, Melted
* 1/3 c. Fresh Strawberry Purée
Preparation
1. Preheat oven to 350 degrees F
2. Grease 9" x 5" loaf pan.
3. Beat together butter and sugar.
4. Add eggs. Mix well.
5. Add sour cream, flour, baking soda, vanilla, and bananas. Mix well.
6. Melt the chocolate gently over a double boiler
7. Pour batter into prepared loaf pan, alternating between the batter, chocolate, and strawberries as desired.
8. Bake for 45 - 55 minutes, or until toothpick in center comes out clean.
