Fantastic fish fry sensationally served from the kitchens of
junowolf
On the menu tonight, fried catfish and sweet potato fries with creole tartar sauce.
Recipes:
Fish fry:
1/2 cup yellow cornmeal
1/2 cup corn flour
1/2 teaspoon salt
1/4 teaspoon fine ground black pepper
1/2 teaspoons paprika
1/4 teaspoon garlic powder
Combine all ingredients. Rinse the fish in water and let the excess drip off, but do not dry. Dredge the fish in the coating mix and fry at 350 until desired golden brown and deliciousness.
Creole Tartar Sauce:
1 cup mayonnaise
2 tbsp sweet relish
2 tbsp dijon mustard
1 tsp chili powder
Tabasco sauce to taste
Lemon juice to taste
Combine all ingredients and allow to mellow in the fridge for an hour or more.
Sweet potato fries:
Peel and cut your sweet potatoes into 1/4"x1/4"x2" strips. Par-fry at 300F for 2 minutes then freeze completely. When ready to serve, fry at 375F until desired crispiness
*note, sweet potato fries will not get as crispy as normal potatoes, no matter what you do.
