Colourful and carefree Avenger inspired cookies from the kitchens of
goldhart
These are cookie sandwiches I made from scratch, inspired by three of the Avengers, to celebrate the new movie. They're sugar cookies with a sort of buttercream filling. The Captain America and Iron Man sandwiches are filled with almond-flavored filling, Hulk sandwiches with vanilla.
Cookies:
1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
*Note that this recipe makes a LOT of cookies. It's about double what most cookie recipes I use make. This works for me since I'm usually baking to give as gifts or something but if you're baking for a normal amount of people you might want to halve it.
In a large bowl, cream together butter and sugar until smooth and slightly fluffy. Beat in eggs (crack into separate bowl first) and vanilla. Stir in the flour, baking powder, and salt. Separate the dough into two halves, wrap, and stick in the fridge to chill for at least 1 hour.
To make pinwheel cookies (Captain America & Iron Man): after chilling, take out dough and separate into as many sections as you want colors. I recommend not going over 4. Knead in food coloring, then flour a rolling surface and pile the doughs on top of each other. Press down the pile until it's more of a flat disk, then place a piece of parchment paper on top and use a rolling pin to roll as flat as you like - keep in mind flatness here will determine how thin or thick the swirls in the cookies are. Once thoroughly flattened, peel back parchment paper and, starting from one of the shorter ends, roll up the dough onto itself (like you would a jelly roll or similar). Take the resulting log roll thing and wrap it in the parchment paper, then put it back in the fridge to chill for another hour or so.
Once you're ready to cut and bake, start by preheating your oven to 400 degrees F.
If you're doing pinwheel cookies, take out the cookies, find a sharp knife, and cut slices off the log to make your cookies! If this is your first time doing this, you'll probably have to cut thinner than you think you should! THINNER, THINNER, GO THINNER!
If you're doing regular cut-out cookies, roll that dough out on a floured surface and cut it with your cookie cutters or glasses or whatever it is you're using. To make really pretty cookie sandwiches, cut out smaller shapes or holes in the cookies so you can see the filling through the top.
Bake 6 to 8 minutes, or until edges start to brown. Move immediately onto cooling rack. Once completely cool, you can make the sandwiches!
Buttercream Filling:
4 tablespoons (1/2 stick) unsalted butter - room temperature
1/4 cup vegetable shortening
2 cups confectioners' sugar
2 teaspoons vanilla extract (or other flavor - I really liked the almond for this, but vanilla was also good!)
Put the butter and shortening in a mixing bowl and, at low speed, gradually beat in the confectioners' sugar and vanilla, until blended. Add food coloring as desired. Turn the mixer up to high and beat until fluffy (3-4 minutes).
Spread filling to taste using a knife (or you can pipe it in using a piping bag for a neater look) between two cookies and press lightly to make sandwiches.
